If I had to pick a favorite cookie,
this has got to be it. It's the one cookie that I cannot get enough
of! Other cookies I'm fine with just one, usually it's a stretch for me
to have two. But I can't keep my hands off of these! I justify by
telling myself they have lots of oatmeal in them, so they're probably
good for me! Maybe I should be eating them for breakfast, too! Gimme
another reason...
They are a staple for me. In fact, I ordered a huge 10 pound bag of
butterscotch chips in bulk, just because I make them so often!
Oatmeal Butterscotch Cookies
1 1/2 cup flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
2 sticks butter, at room temperature
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 tsp. vanilla
3 cups quick oats
1 package (11 oz) butterscotch chips, or 2 cups
Directions:
1. Preheat oven to 375.
2. Combine the flour, baking soda, cinnamon, and salt in a small bowl.
3. In a mixing bowl, beat the butter, sugars, eggs, and vanilla until smooth.
4. Gradually beat in flour mixture, followed by oats. Stir in the chips.
5. Drop by rounded tablespoons onto cookie sheet and bake 9-10 minutes.
6. Let sit for a minute or two, then transfer to a wire cooling rack.
