Oatmeal Butterscotch Cookies

34

If I had to pick a favorite cookie, this has got to be it.  It's the one cookie that I cannot get enough of!  Other cookies I'm fine with just one, usually it's a stretch for me to have two.  But I can't keep my hands off of these!  I justify by telling myself they have lots of oatmeal in them, so they're probably good for me!  Maybe I should be eating them for breakfast, too!  Gimme another reason...
 :)
They are a staple for me.  In fact, I ordered a huge 10 pound bag of butterscotch chips in bulk, just because I make them so often!
